Who else just shows up to Thanksgiving dinner just for the sides? Um…me!!! Bring on the mashed potatoes and yummy stuffing! This one is a simple, classic recipe that has been my go to for years! You can even make it ahead of time if needed. Bring on all the Thanksgiving yum!
SIMPLE THANKSGIVING STUFFING
1 pound stuffing bread {I buy this bagged already dried out from the bakery}
3/4 cup unsalted butter
2 1/2 cups yellow onion, chopped
1 1/2 cups celery, chopped
1/2 cup finely chopped flat leaf parsley
2 tablespoons finely chopped fresh sage
1 tablespoon finely chopped fresh rosemary
1 tablespoon finely chopped fresh thyme
kosher salt, to taste
ground black pepper, to taste
2 1/2 cups chicken broth, divided
2 large eggs
Melt the butter in a large saucepan over medium heat, add onion and celery. Cook until browned and softened for about 10 minutes, stirring occassionally. Add celery and onions to large bowl with bread crumbs. Stir in herbs, salt and pepper, gently toss. Drizzle in 1 1/4 cups of the chicken broth and combine. Place in large casserole dish, set aside to let cool.
Preheat oven to 350. In large bowl, whisk together 1 1/4 cups chicken broth and eggs. Add to stuffing mixture and toss gently to combine. Cover dish with foil and bake for 40 minutes.
If making ahead: do not add chicken broth and egg mixture until ready to bake. It can be made up to one day ahead of time.
