It’s Taco Tuesday and I love a quick and easy dinner! Our weeknights are super busy with after school activities and sports! This one dish meal is easy to put together and cooks under 30 minutes!
To make this easy weeknight meal: Line a baking sheet with parchment paper and preheat oven to 425. I save time by using presliced vegetables. If you cannot find them in store, thinly slice up a red onion and green, red and yellow pepper. Toss the sliced vegetables in olive oil and season with salt and pepper. Place on one side of the baking sheet. Next, slice in strips boneless, skinless chicken breast. Place in a large bowl and toss with olive oil and your favorite fajita seasoning. Place on the other side of the baking sheet. Place sheet in oven and bake for 20-25 minutes. Serve with warm tortillas and your favorite toppings such as shredded cheese, sour cream and avocados. Enjoy!
