It’s pumpkin spice season! Today I am sharing a fall family favorite, Pumpkin Apple Muffins! These are delish and are great as an after school snack. My kids love them and the whole house smells like fall when they are baking in the oven! The recipe was actually given to us by one of our neighbors a few days after we officially moved into our home. She welcomed us to the neighborhood with a basket overflowing with these muffins and included the recipe. I make them several times each fall season and am excited to share the recipe today! Enjoy!
PUMPKIN APPLE MUFFINS
2 eggs
1 cup pumpkin filling
1/2 cup oil
2 1/2 cups of flour
2 cups sugar
1 tablespoon pumpkin pie spice
1 teaspoon baking soda
2 cups apples, cored and peeled
Preheat the oven to 350.
In large bowl, beat together eggs, pumpkin filling and oil. Add flour, sugar, pumpkin pie spice and baking soda, mix. *The batter will be stiff until the apples are added. Add the peeled apples. Fill muffin cups and bake for 35-40 minutes. Let cool and remove from pan.
