Summer is the time for backyard bbq’s, parties and good, fresh food! This is the best salad when the tomatoes are in season, juicy and fresh! This is straight from my mother-in-law’s recipe box and it’s a winner! It’s a great side salad or make a big batch and enjoy it for lunch!
PASTA WITH MARINATED TOMATOES SALAD
2-3 cups chopped tomatoes
4 green onions with tops, chopped
2 cloves of garlic, finely chopped
1/4 cup of snipped parsley or 1 tablespoon dried
1/2 teaspoon salt
2 teaspoon snipped fresh basil leaves or 1/2 teaspoon dried basil leaves
1/8 teaspoon coarsely ground pepper
3 tablespoon olive oil
1 8oz package of pasta
Mix all ingredients together, except the pasta. Cover and refrigerate two hours but no longer than 24 hours. Prepare pasta according to package directions. Drain. Immediately toss with tomato mixture. *Tomato mixture can be made a day ahead. Add the pasta when ready to serve.
