Every day after school, my kids come home ravenous! When I ask how their day was their response is “I am starving!” which usually leads to them snacking uncontrollably after school. These energy bites are great for after school snacks or to pack in their lunches. I sneak in things that are good for them like chia seeds and flaxseed and because of the chocolate chips, they think they are getting a real treat! I honestly like these myself {hubby too!}. They are a great post workout or afternoon snack! You can certainly substitute the peanut butter for almond butter. They are a great healthy snack! Enjoy!
NO BAKE ENERGY SNACK
1 cup dry oats
1/2 cup chocolate chips
2/3 cup creamy peanut butter or almond butter
1/4 cup ground flaxseeds
2 tablespoons raw, unfiltered honey
1 tablespoon chia seeds
2 teaspoons vanilla extract
Mix all ingredients in a large bowl, cover and chill in the fridge for up to an hour. Remove from fridge and roll into snack sized balls. Store in container in fridge for up to 1 week.
