You can’t pass up a good soup on a cold winter’s day! This is a go to in our house and it is SO easy to put together! Literally it only requires 4 ingredients! You can certainly add any kind of shredded chicken but I find a rotisserie chicken is best! Around Thanksgiving, we make this with our leftover turkey too! The topping options are endless but we love added sliced radishes, avocado and some fresh cilantro! This makes great leftovers too! Enjoy!
MEXICAN STYLE CHICKEN SOUP
4 cups chicken broth
1 can hominy, drained and rinsed
1 jar mild green salsa
Shredded rotisserie chicken
Toppings: radishes, cilantro, avocado, lime
In large pot, combine chicken broth, hominy and salsa and bring a boil. Add shredded chicken, simmer. Serve soup with optional toppings & enjoy!
