Where this recipe came from, I have no idea! But it honestly is a staple in our house, especially after the holidays when we have a ton of leftover ham! Our favorite place to order ham during Christmas is from The Honey Baked Ham Co.! If you have never had a ham from them, you are honestly missing out! However, any ham steak will do. Sometimes, when we are craving this soup in the middle of winter, I will pick up a ham steak and packaged ham hock from our local grocery store. If there are no ham hocks out, you can always ask the butcher! This is truly a family fave! Enjoy!
LEFTOVER HAM SOUP
Olive oil
½-1 cup diced ham steak
1 medium chopped onion
1 chopped red pepper
1 chopped green pepper
2 garlic cloves, chopped
1 bag frozen corn
1 smoked ham hock
2 medium potato, peeled and cut into 1” pieces
6-8 cups water
Heat up olive oil in large pot, then add ham, onion, peppers and garlic and saute for 10 minutes. Add corn and stir, cook for 5 minutes. Add ham hock, potato and then water. If you would like it more “soupy”, add more water. Bring to a boil and reduce heat to medium. Simmer partially covered for 1 hour. Remove ham hock and season to taste with salt and pepper.
