I literally make this simple salad once a week for hubby and I! I make it early in the day so that it is all ready to go when it comes to dinnertime! It’s a quick and healthy dish for those nights we are all on the go running around town to sports games and other activities. It makes enough to have for lunches for a few days too. The quinoa is a great base so you can really change this up each week! I love greek salad so my go to is this Greek style one. Enjoy!
GREEK STYLE QUINOA SALAD
2 cups of uncooked quinoa
1 cucumber, chopped
1 pint cherry tomatoes, halved
1 cup Kalamata olives, halved
Crumbled feta cheese
Olive oil
Salt and pepper, to taste
Cook quinoa according to package directions. While quinoa is cooking, chop up cucumber, cherry tomatoes and olives. Set aside in large bowl. Once quinoa is cooked, toss in with chopped ingredients. Drizzle with olive oil. Cover and place in fridge to chill. When ready to serve, sprinkle in feta cheese and add salt and pepper to taste.
