Cauliflower rice is a simple base for any salad bowl. It’s a high fiber, low carb alternative to pasta or rice. It’s easy to whip up early in the day and enjoy as a quick lunch or dinner. You can really add any ingredients you would like, the possibilities are endless! Here’s my go to recipe!
CAULIFLOWER RICE BOWL
1 package of cauliflower rice, frozen or fresh
1 cucumber, sliced
1 package of cherry tomatoes, halved
1 can of canellini beans, drained and rinsed
Feta cheese
Olive oil
Salt and pepper to taste
Cook cauliflower rice according to package directions, let cool. While rice is cooking, prep ingredients. In large salad bowl, add rice, cucumber, cherry tomatoes and canellini beans. Drizzle with olive oil and combine. Place in fridge till chilled. Once ready to eat, top with feta cheese and salt and pepper to taste. Enjoy!
